I have played both characters, Kassandra on my first play through, and Alexios on NG+ (which you will learn about later) I can confidently say that if you want really moving story elements, I would go with Kassandra, her voice actor delivered a sledgehammer performance and fills each dialogue with raw emotion, who ever you don’t pick in the beginning spoiler will become the main antagonist
Edward probably learned it later but we can use it before because animus. Haytham probably learned it from Edward. That’s different, Kassandra and Alexios did the leap of faith before it was even invented. Also, Kassandra and Alexios use Ikaros, but Bayek was the one to start that trend of having eagle companions, 400 years after Odyssey.

I'm playing as Alexios and they're talking about capturing the Deimos' family (Mother, father, and brother) and they refer to her as the Champion.
Kassandra always came off as more sarcastic than Alexios, so if you prefer that I'd totally understand. For me I just like the range of emotions Alexios has (especially in scenes where there's a lot of emotional tension). Plus the big brother/little sister friendship dynamic he has with Phoibe is endearing IMO.

If this was a usual RPG, the player character's name, age, race, gender and whatever wouldnt matter because it is an avatar for the player, but Kassandra and Alexios have entire stories that hinge upon them. These events happened in the past, and yet despite that everything that happens is based off a choice made in the modern day.
Which one you can acquire depends on who you're playing as but if you switch between them with a NG+ you'll still have whichever version you unlocked the first time and can wear it on the opposite character. Huh, that makes sense. Alexios all the way. Dont hate Kass, but alexios is zaddy.
The novel ending had Kassandra sparing Nikolaos and Stentor, saving Myrinne, and killing Deimos (though his death is a bit different from the game, he didn't get kicked off Mt. Taygetos). In general, most of the "good" dialogue options in-game are canonical. For example, in the novelization Kassandra is critical of Sparta's helot system.
